New potato, Watercress and Peanut Salad

Recipe Introduction
Nice with a classy barbecue that involves things like prawns, satay or marinated meat.
note: light olive oil is NOT low in fat. It is lighter in flavour. You can use any neutral flavour oil you like instead if you like.
List of Ingredients
- 500g new potatoes
- 4 spring onions, finely sliced
- 1 tbs red wine vinegar
- 1/2 cup peanuts
- 2tbs light olive oil
- freshly ground black pepper
- 1 bunch watercress, trimmed and sliced
- 2 tbs peanut oil
Instructions
- Boil potatoes until tender. In a jar combine oils, vinegar, pepper and peanuts. Shake to combine.
- Drain potatoes well. Transfer to salad bowl and while still quite hot pour dressing over.
- Stir and cool. Mix watercress and spring onions through the potatoes. Serve.
