Pear, Prawns and bocconcini Salad

List of Ingredients
- 200g firm red or green pear cored
- 100g mixed lettuce leaves
- 20 medium cooked king prawns, peeled and deveined
- 12 green beans, trimmed and cut into 4cm
- 20g bocconcini, sliced (little round cheeses)
- 1 cup sourdough croutons
- 1 tightly packed cup parsley
- 30g pickled gherkins roughly chopped
- 30g capers
- 1 clove chopped garlic
- 1 tps olive oil
- 2-3 tbs lemon juice
- ground black pepper to taste
Instructions
- Blanch beans and then chill so not soggy (Do this by immersing them in boiling, salted water for a short time (maybe 2 minutes) then into iced water)
- Slice peras finely.
- On each plate layer equal amounts of leaves, pear slices, prawns, beans and bocconcini.
- alternatively place all ingredients in large bowl and toss with salsa verde.
- Make salsa verde by placing partsley, gherkins, capers and garlic in a food proccessor and processing for 30 seconds, then add in oil, juice, pepper and work until smooth and runny.
- Drizzle over the salad ingredients or serve in a small jug for people to drizzle themselves.
- Top with croutons last
