    List of Ingredients


    • 750g potatoes
    • 1 cup corn kernels
    • 3 tbs white vinegar
    • 1 cup fresh basil leaves, chopped
    • 1 small garlic clove
    • 1/2 salad onion, chopped finely
    • 1/2 cup olive oil
    • 1 cup cherry tomatoes, quatered


    Instructions


    1. Cook potatoes and dice or slice. Toss with 1 tbs vinegar and season to taste.
    2. Puree basil and garlic with remaining vnegar. Keeping food processor running, add oil. Pour the dressing over corn and potatoes.
    3. Add onion, tomato, salt and pepper an toss.
