List of Ingredients
- 750g potatoes
- 1 cup corn kernels
- 3 tbs white vinegar
- 1 cup fresh basil leaves, chopped
- 1 small garlic clove
- 1/2 salad onion, chopped finely
- 1/2 cup olive oil
- 1 cup cherry tomatoes, quatered
Instructions
- Cook potatoes and dice or slice. Toss with 1 tbs vinegar and season to taste.
- Puree basil and garlic with remaining vnegar. Keeping food processor running, add oil. Pour the dressing over corn and potatoes.
- Add onion, tomato, salt and pepper an toss.
