    Potato Cucumber Salad

    I like this. Sometimes I find vinegar overpowering so I find you can leave it out or substitute the milder, lemon juice if desired.However potatoes are bland enough to take it if you do use vinegar.

    serves 4-6


    List of Ingredients


    • 750g potatoes
    • 3/4 tsp cumin seed
    • 2 tbs white vinegar
    • 2 cucumbers, peeled, cored and cut into slices
    • 2/3 cup plain yoghurt
    • 1 clove garlic, pressed


    Instructions


    1. Toas cumin seeds in a small pan, stirring over heat for one minute.
    2. Grind to powder.
    3. Cook potatoes. Cut to the shape you desire for salad and pour over 1 tbs vinegar. Add salt to taste and allow to cool.
    4. Seperately toss cucumbers with 1 tbs vinegar, salt and drain well.
    5. Add to potatoes with yoghurt, garlic and cumin. Mix well.
