Potato and Pea Salad

List of Ingredients
- 750g potatoes
- 1 tbs white vinegar
- salt to taste
- 1/2 cup ricotta (can use mayonnaise or yoghurt)
- 3 tbs fresh mint leaves, chopped
- 1 cup cooked, shelled green peas (do not overcook)
Instructions
- Cook potatoes until tender. Toss with vinegar and salt.
- Cut potatoes into pieces. Chill them.
- Thin the ricotta with a tiny bit of hot water and stir through the mint.
- Pour dressing over the potatoes. Ass peas and season to taste. Toss well.
Final Comments
Boiled or roast beetroot would be a nice addition
