    Salad for me an hungry teenage son

    can be varied any way you want. If you dont like this dressing check out my others.

    we had it with chicken wings and hot chili wedges. Aragorn added the almonds because he always seems to need more protein!


    List of Ingredients


    • 1/2 red onion sliced very thinly
    • 1 garlic clove chopped finely
    • 3 tbs balsamic vinegar
    • 6 tbs extra virgin olive oil
    • 1/2 tbs salt
    • 1/2 tbs mustard powder (optional)
    • large handful baby spinach leaves (can use silver beet)
    • 1 red delicious apple (a large one)
    • 1 large tomato
    • 3 small radishes
    • about 4 tbs slivered almonds (or use LSA)


    Instructions


    1. Combine onion, garlic, vinegar, oil, salt and mustard and leave a few minutes to infuse.
    2. Slice tomato into wedges and apple into thin slices. Combine with the dressing adding salad leaves. Add radish sliced thinly.
    3. drain off excess dressing if required (Aragorn does not like a lot of dressing)
    4. Sprinkle over almonds.


    Final Comments


    I had plain greek yoghurt as a dip for the wedges but it was quite nice with the salad too. Olive oil is low in cholesterol and pretty good for you but if you have to avoid even that fat then omit it and also the almonds. My teenagers are skinny and energetic so I allow good fats!
