    Scandinavian Potato Salad

    Recipe Introduction


    serves 4-6. Similar to the Latvian recipe but with far fewer ingredients making it better for very fussy people (eg kids)


    List of Ingredients


    • 500g new potatoes (ie those little ones)
    • salt and pepper
    • 1 cup sour cream or yoghurt
    • 1/3 cup chopped purple onion
    • 1/3 cup chopped fresh dill


    Instructions


    1. Wash potatoes well and cook them in boiling salted water until tender (8-10 minutes)
    2. Drain well. Season with salt and pepper and toss gently in sour cream or yoghurt.
    3. Add dill and onion, toss again and chill. Before serving toss one more time. At this stage adjust seasoning and add more yoghurt if desired.
