Scandinavian Potato Salad

Recipe Introduction
serves 4-6. Similar to the Latvian recipe but with far fewer ingredients making it better for very fussy people (eg kids)
List of Ingredients
- 500g new potatoes (ie those little ones)
- salt and pepper
- 1 cup sour cream or yoghurt
- 1/3 cup chopped purple onion
- 1/3 cup chopped fresh dill
Instructions
- Wash potatoes well and cook them in boiling salted water until tender (8-10 minutes)
- Drain well. Season with salt and pepper and toss gently in sour cream or yoghurt.
- Add dill and onion, toss again and chill. Before serving toss one more time. At this stage adjust seasoning and add more yoghurt if desired.
