Steak and Potato Salad

Recipe Introduction
serves 4 hungry or 6 on diet. Most of the ingredients can be omitted or varied as desired.
List of Ingredients
- 8 small potatoes
- 1 red onion halved and sliced thinly
- 1 quantity citrus mustard dressing (my recipe) or dressing you like.
- small handful torn basil leaves.
- 1-2 steaks
- grainy mustard (optional)
- baby spinach other leaves
- carrots cut into ribbons or thin slices.
- slices of cucumber
- chunks of tomato (leave out for fussies)
- snow pea sprouts (leave out for fussies)
Instructions
- Microwave potatoes about 10 minutes until cooked but still firm.
- Marinade onion in the dressing.
- Cut potatoes (while warm) into bite sized pieces and toss with torn basil leaves.
- Strain some dressing from onions over potatoes.Mix through.
- Fry steaks until as done as you like (I am always for rare). You may spread with grainy mustard before cooking if you like.
- Rest steaks 5 minutes.
- In each bowl build up salad leaves of your choice, carrot, cucumber, tomato, potatoes.
- Thinly slice steak and arrange over salad. Top with onions and dressing.
Final Comments
Full meal in a bowl. You dont even need bread though a stubbie of coopers pale ale is probably good.
