    The Best French Dressing

    Recipe Introduction


    Many people prefer to use vinegar. If you do please use a good one. I like the subtlety of citrus. Some people maintain there should be up to five times as much oil as citrus or vinegar. Adjust the proportions as your palate requires.


    List of Ingredients


    • Juice of 1 lemon
    • extra virgin olive oil (double as much as the lemon juice)
    • generous pinch salt
    • grind pepper
    • 1-2tsp powdered sugar (optional)


    Instructions


    1. Shake together and drizzle. Easy or what?


    Final Comments


    You can substitute lime juice, orange juice or vinegar for the lemon. Good vinegars include red wine or balsamic.

    You can flavour it with herbs, mustard, honey, even a touch of soy sauce with some salads. It may not really be french dressing anymore but it will taste good.

    Other oils you can use include pumpkin seed, macadamia, walnut.
