Tuna and Caper Pasta Salad

serves 6 as a side dish (fewer as a main). Could serve this over rocket or mixed lettuce leaves.
List of Ingredients
- 500g short pasta (bow ties, spirals)
- 1 tbs olive oil
- 2 tbs capers, well drained
- 425g tuna in oil, drained and flaked
- 1/2 cup marinated, mixed olives
- 1/4 cup chopped parsley
- 1/2 cup lemon juice.
Instructions
- Cook pasta until al dente, drain and refresh.
- Heat oil in frypan, add capers and saute for 1 minute until just crisp (could add a 1/2 a red onion finely chopped here if you wanted to). Drain on kitchen paper.
- Combine pasta, tuna,capers, olives, parsley and lemon juice in a large bowl and toss gently.
Final Comments
Can be prepared several hours ahead and stored covered in refrigerator. Can add halved cherry tomatoes or grated carrot if desired
