    Basic Potato Salad

    List of Ingredients


    • 2 cups chicken stock
    • 2 tbs fresh mint sprigs
    • 500g pontiac potatoes (peeled)
    • potato salad dressing


    Instructions


    1. Bring stock to boil. add potatoes and mint and cook until just tender (about 15 minutes).

    2. Drain and cool and cut into cubes. place in salad bowl, fold through dressing.

    3. Cover and refrigerate before serving.
