Basic Potato Salad

List of Ingredients
- 2 cups chicken stock
- 2 tbs fresh mint sprigs
- 500g pontiac potatoes (peeled)
- potato salad dressing
Instructions
- Bring stock to boil. add potatoes and mint and cook until just tender (about 15 minutes).
- Drain and cool and cut into cubes. place in salad bowl, fold through dressing.
- Cover and refrigerate before serving.
