Freekeh Salad

List of Ingredients
- 2 cups cooked freekeh (cracked grain or wholegrain variety as you wish)
- 1 cup roasted capsicum, cut into strips
- 1 cup grilled eggplant, chopped
- 2 bunches fresh coriander (roughly chopped)
- 1 cup dates (chopped)
- 1 small red onion , finely sliced
- juice of 3 lemons
- 1/2 cup olive oil
- 2 tbs sugar
- 2 tsp salt
- 2 tsp cracked black pepper
Instructions
- Mix together lemon juice, oil, sugar, salt and pepper. Shaking is prob best form of combining.
- Toss all other ingredients together. Coat thoroughly in the dressing and serve room temperature.
Final Comments
The recipe claims it as a good side dish, but I quite like it as the meal (for lunch). You can dollop some plain yoghurt on it if liked. Unless you are vegetarian, this one goes pretty well with grilled or roast meats and fish.
