Chicken Foccacia's Sebastian style

Recipe Introduction
sebastian is eight years old, has a lot of homework, scouts, theatre and other hobbies so we need easy meals that are healthy. He is a bit fussy but this one worked.
Choose any ingredients you like from the list and put at least 3 of them, as much as you can fit on your foccacia
List of Ingredients
- 1 foccacia per person (can use other bread but focaccia is yummy)
- tinned corn
- avocado mashed (squeeze of lemon optional)
- baby spinach leaves
- sliced tomato
- sliced mushrooms
- thinly sliced onion
- finely chopped garlic
- shredded or sliced cheese (one that melts easily)
- shredded barbecue chicken
- very finely chopped broccoli
- torn basil leaves or pesto
- grated zucchini
- alfalfa sprouts
Instructions
- . Halve focaccias. you may butter bread or brush with olive oil (we didnt)
- arrange as many toppings on focaccia as you wish for
- place top on each foccacia and toast in a toastie maker (or just heat in oven) 5 minutes or until browned and cheese melted.
Final Comments
note- for teenagers or very greedy people it may be more sensible to budget 2 focaccias (unless they are large ones)
other things you could add - roast pumpkin, asparagus, capsicum, leftover roast meat (or cold meat), tuna, capers, olives, anchovies, etc...use you imagination
