    Chicken Salad Sandwiches (Rolls)

    I made it up with what I had.


    Recipe Introduction


    I apologise if this is very similar to other recipes I have posted. I probably have done stuff like this before.


    List of Ingredients


    • 2-3 pieces leftover bbq chook
    • 1/2 cup sour cream (more if u like)
    • 2 tsp dijon mustard (to taste)
    • 1/2-1 tsp honey (as desired)
    • good sprinkle black pepper
    • at least 2 spring onion (finely chopped)
    • 1 tsp capers (can be chopped if u like)
    • coral lettuce
    • bird seed rolls (9-grain from woolworths is good)
    • butter (I don;t do margarine)


    Instructions


    1. Split rolls and butter them well. Aparently sandwiches go less soggy if buttered properly.
    2. Mix together chicken, spring onion (can use red), capers, honey, mustard, pepper and sour cream (can leave to infuse flavours)
    3. Spread chicken on the buttered rolls. Top with lettuce leaves and yet more chicken (rolls need a lot of filling as they are thick).
    4. Package as desired.


    Final Comments


    We had them as our picnic lunch, bananas and custard tarts for dessert and a glass of riesling with the rolls. The magpies came to beg some but got very little.
