    List of Ingredients


    • 1/3 cup olive oil
    • 1 tbs lemon juice
    • 1 tbs brown sugar
    • 300g button mushrooms (halved)
    • 8 x 1 1/2 cm thick slices ciabatta bread (or baguette)
    • 250g cherry tomatoes, washed and halved
    • 2 tbs basil pesto
    • ground black pepper to taste


    Instructions


    1. Combine 1/4 cup olive oil, lemon juice and sugar in a screw top jar. Shake until well combined.
    2. Place mushrooms into shallow dish. Pour over oil mixture and stand for 10 mins.
    3. Preheat bbq or chargrill to high. Brush sliced bread on both sides with remaining oil.
    4. Barbecue or grill 1-2 minutes on each side (or until golden)
    5. Heat large frypan over high heat. Add mushrooms and marinade. Cook stirring constantly 1 min.
    6. Remove from heat and add tomatoes and pesto. Toss well to combine.
    7. Spoon mushroom and tomato mixture onto grilled bread. Season with pepper and serve immediately.


    Final Comments


    Great by itself or with a poached egg
