List of Ingredients
- 1/3 cup olive oil
- 1 tbs lemon juice
- 1 tbs brown sugar
- 300g button mushrooms (halved)
- 8 x 1 1/2 cm thick slices ciabatta bread (or baguette)
- 250g cherry tomatoes, washed and halved
- 2 tbs basil pesto
- ground black pepper to taste
Instructions
- Combine 1/4 cup olive oil, lemon juice and sugar in a screw top jar. Shake until well combined.
- Place mushrooms into shallow dish. Pour over oil mixture and stand for 10 mins.
- Preheat bbq or chargrill to high. Brush sliced bread on both sides with remaining oil.
- Barbecue or grill 1-2 minutes on each side (or until golden)
- Heat large frypan over high heat. Add mushrooms and marinade. Cook stirring constantly 1 min.
- Remove from heat and add tomatoes and pesto. Toss well to combine.
- Spoon mushroom and tomato mixture onto grilled bread. Season with pepper and serve immediately.

Great by itself or with a poached egg
