Hasselback Potatoes

List of Ingredients
- 4 medium, even-sized potatoes, peeled and halved
- 2 tbs breadcrumbs
- 1/3 cup grated parmesan cheese
- 60g melted butter
- 1/2 tsp paprika
- freshly ground black pepper
Instructions
- Lightly brush a shallow, ovenproof dish with melted butter.
- On a chopping board place each potato flat (cut) side down.
- Make thin evenly spaced cuts about 2/3 way through. Place them (again flat side down in the dish.
- Brush with melted butter and bake 200C 30 minutes
- Baste occaisionally with butter
- In a small bowl combine cheese, breadcrumbs, paprika and pepper. Divide mixture evenly over potatoes.
- Return to oven for a further 15 minutes. Serve immediately (with steak, seafood crepes or chicken kiev - or whatever you like)
