    List of Ingredients


    • 4 medium, even-sized potatoes, peeled and halved
    • 2 tbs breadcrumbs
    • 1/3 cup grated parmesan cheese
    • 60g melted butter
    • 1/2 tsp paprika
    • freshly ground black pepper


    Instructions


    1. Lightly brush a shallow, ovenproof dish with melted butter.
    2. On a chopping board place each potato flat (cut) side down.
    3. Make thin evenly spaced cuts about 2/3 way through. Place them (again flat side down in the dish.
    4. Brush with melted butter and bake 200C 30 minutes
    5. Baste occaisionally with butter
    6. In a small bowl combine cheese, breadcrumbs, paprika and pepper. Divide mixture evenly over potatoes.
    7. Return to oven for a further 15 minutes. Serve immediately (with steak, seafood crepes or chicken kiev - or whatever you like)
