Savoury Freekeh with Prunes&Apricots

freekeh is a green wheat product very healthy. Prob still available in health food shops. If not use burghul or couscous or any grain you like
List of Ingredients
- 2 cups uncooked freekeh (cracked or wholegrain)
- 5 tbs olive oil
- 1 cinnamon stick
- 5 whole cloves
- 2 cloves garlic (crushed or chopped)
- 3 tbs ground coriander
- 1 onion, diced
- 1/2 cup dried apricots
- 1/2 cup chopped prunes
- 1/2 cup pinenuts
- 5 cups chicken (or veg for vegetarians) stock or water
- 3 cardamom pods
- salt and pepper
Instructions
- Heat oil in a heavy pot. Fry onion, garlic and pinenuts until very lightly golden. Add cardamom pods, cinnamon stick, cloves and coriander. Fry gently a further 2 minutes.
- Add freekeh, stock, apricots and prunes. Bring to the boil. Cover with a very tightly fitting lid and simmer on low heat 20-25 minutes until tender.
- Season with salt and pepper.
Final Comments
Serve hot. Good with fish, lamb or poultry or makes an ideal stuffing.
