    Asian-style Chicken and Mushroom Soup

    List of Ingredients


    • 250g chicken tenderloins
    • 300g button mushrooms
    • 1.25 litres chicken stock
    • 2 tbs peanut oil
    • 250g thin fresh egg noodles
    • 1 tsp sesame oil
    • 1 bunch choy sum, chopped
    • 150g enoki mushrooms, trimmed


    Instructions


    1. Preheat a barbecue or char grill on medium high. Brush chicken with 1 tbs oil.
    2. Barbecue or grill chicken 1-2 minutes each side until just cooked through.
    3. Cut chicken in half lengthways and keep warm.
    4. Heat remaining oil in a large saucepan over medium-high heat.
    5. Add mushrooms. Cook 3-4 minutes until tender. Stir in stock and choy sum stalks, reserving leaves for later.
    6. Bring to the boil. Reduce heat to medium low and simmer for 5 minutes.
    7. add noodles, cook, stirring often for 3 minutes. Add choy sum leaves, chicken and enoki mushrooms. Cook 1-2 minutes until leaves wilted.
    8. Spoon into bowls, drizzle with sesame oil and serve immediately.


    Final Comments


    good served with a chilli sauce or paste. I make my own as for hainan chicken (chilli, garlic, ginger, vinegar (or lemon) and sugar)
