Asian-style Chicken and Mushroom Soup

List of Ingredients
- 250g chicken tenderloins
- 300g button mushrooms
- 1.25 litres chicken stock
- 2 tbs peanut oil
- 250g thin fresh egg noodles
- 1 tsp sesame oil
- 1 bunch choy sum, chopped
- 150g enoki mushrooms, trimmed
Instructions
- Preheat a barbecue or char grill on medium high. Brush chicken with 1 tbs oil.
- Barbecue or grill chicken 1-2 minutes each side until just cooked through.
- Cut chicken in half lengthways and keep warm.
- Heat remaining oil in a large saucepan over medium-high heat.
- Add mushrooms. Cook 3-4 minutes until tender. Stir in stock and choy sum stalks, reserving leaves for later.
- Bring to the boil. Reduce heat to medium low and simmer for 5 minutes.
- add noodles, cook, stirring often for 3 minutes. Add choy sum leaves, chicken and enoki mushrooms. Cook 1-2 minutes until leaves wilted.
- Spoon into bowls, drizzle with sesame oil and serve immediately.
Final Comments
good served with a chilli sauce or paste. I make my own as for hainan chicken (chilli, garlic, ginger, vinegar (or lemon) and sugar)
