they suggest as a vegetarian option Sanitarium soy healthy garlic and herb soy slices instead of chicken. You could just use tofu or omit chicken too
Leeks are full of dirt. It's best to halve them lengthwise and wash under cold water, or soak before slicing.
List of Ingredients
- 2 packets 2 minute noodles
- 125g bacon rashers, rindless, roughly chopped (optional)
- 350g chicken thigh fillets, sliced
- 1 leek, washed, halved and sliced
- 2 medium carrots, diced
- 100g mushrooms, sliced
- 2 litres chicken stock (or use stock powder and water)
Instructions
- Place noodles in heat-proof bowl. Cover with boiling water. Allow to stand 3 min until soft. Drain, cover, keep warm
- Heat non-stick frypan over med heat. cook bacon until browned. Remove to plate.
- Add chicken. Cook 2-3 min until golden. Remove to plate.
- Add leek and carrots. Fry for 2 min. Stir through mushrooms. Cook stirring 2 min until tender.
- Return bacon and chicken to pan with chicken stock. Bring to boil. Stir through noodles. Reduce heat. Simmer 2 min.
- Remove from heat.
Final Comments
Best served with bake at home ciabatta loaf or similar and butter.
