Chilled Pear and Plum Soup

A different sort of a dessert and quite healthy. Also works as a breakfast food (but have some raisin toast or something with it)
List of Ingredients
- 6 pears, peeled and cored
- 825g dark plums, stones removed (tinned is ok)
- 3/4 cup sauterne or sweet white wine
- grated rind and juice of 1 lemon
- 1/2 cup creme fraiche or natural yoghurt
Instructions
- In a saucepan, combine pears, plums, sauterne, lemon rind and juice. Bring to the boil.
- Reduce ehat and simmer 8-10 minutes or until pears are tender. Cool
- Puree to smoothness. Chill well. Serve topped with creme fraiche or yoghurt.
Final Comments
If you like you may garnish it with a mint leaf.
