List of Ingredients
- 2 cups peeled and diced coliban potatoes
- 1 cup diced carrots
- 2 cups water (or stock may be used)
- 2 tbs cornflour
- 1 cup diced celery
- 3/4 cup diced onions
- 1 cup milk
- chopped parsley
Instructions
- Place potatoes, celery, carrots and onion in a saucepan with water. Season well.
- Cover. Bring to boil. Reduce heat and simmer 20 minutes.
- Mix cornflour to a smooth paste then add to soup and stir well for 3 minutes.
- Garnish with finely chopped parsley
