    List of Ingredients


    • 2 cups peeled and diced coliban potatoes
    • 1 cup diced carrots
    • 2 cups water (or stock may be used)
    • 2 tbs cornflour
    • 1 cup diced celery
    • 3/4 cup diced onions
    • 1 cup milk
    • chopped parsley


    Instructions


    1. Place potatoes, celery, carrots and onion in a saucepan with water. Season well.
    2. Cover. Bring to boil. Reduce heat and simmer 20 minutes.
    3. Mix cornflour to a smooth paste then add to soup and stir well for 3 minutes.
    4. Garnish with finely chopped parsley
