Frickadilee Soup

Recipe Introduction
This is not the proper name for it, but this is what my dad jokingly calls it.
serves 4 or more
List of Ingredients
6-8 cups water or stock
about 4 cups vegies (I would try onion, carrot, potato, cabbage, parsnip, turnip, swede-but anything goes eg pumpkin, leek, corn, peas, brocoli, cauliflower, beans, soup mix,)
1/2 cup wine (optional)
1 tbsp good quality olive oil
500g kangaroo or lean beef mince
1 lge egg
3tbsp honey (or to taste)
5tbsp soy sauce (or to taste)
150g sour cream
very finely diced onion (or spring onions)
4 cloves finely crushed garlic
sprinkle of pepper
3 tbsp tomato paste (optional)
finely chopped parsley (optional)
Recipe
1. In a bowl mix mince, egg, honey, soy, sour cream, very fine onion, garlic and pepper. Form into small balls (sligtly larger than a walnut)
2. In a large deep pot heat oil, fry vegetables (adding onion first, then hard veg, etc- be sensible about the order)
3. Add wine, increase heat to boiling. Add stock or water. When the whole mixture is boiling add in the meat balls and let them cook.
4. Turn down heat, add tomato paste and finish cooking more gently.
5. Serve sprinkled with parsley with crusty bread or add pasta in after meat to make soup even more substantial.
