    Serve topped with sauted sliced mushrooms and chopped parsley and/or with garlic bread


    List of Ingredients


    • 30g butter
    • 3 potatoes, peeled and cubed
    • 2 stalks celery, diced
    • 1 onion, chopped
    • 1/2 red capsicum, chopped
    • 2 cups chicken stock
    • 1/2 cup light sour cream
    • 250g swiss brown mushrooms, sliced.
    • 2 cups milk
    • 1/2 tsp thyme
    • pepper


    Instructions


    1. Melt butter in a large saucepan. Saute potatoes, celery, onion and capsicum until onion is tender.
    2. Stir in stock, thyme and pepper. Add milk. Bring to the boil.
    3. Reduce heat. Simmer covered for 10 minutes or until potatoes are tender. Add remaining ingredients and blend until smooth.
    4. Bring to the boil. Reduce heat and simmer a further 5-10 minutes. Serve as above.
