Mushroom and potato Soup

Serve topped with sauted sliced mushrooms and chopped parsley and/or with garlic bread
List of Ingredients
- 30g butter
- 3 potatoes, peeled and cubed
- 2 stalks celery, diced
- 1 onion, chopped
- 1/2 red capsicum, chopped
- 2 cups chicken stock
- 1/2 cup light sour cream
- 250g swiss brown mushrooms, sliced.
- 2 cups milk
- 1/2 tsp thyme
- pepper
Instructions
- Melt butter in a large saucepan. Saute potatoes, celery, onion and capsicum until onion is tender.
- Stir in stock, thyme and pepper. Add milk. Bring to the boil.
- Reduce heat. Simmer covered for 10 minutes or until potatoes are tender. Add remaining ingredients and blend until smooth.
- Bring to the boil. Reduce heat and simmer a further 5-10 minutes. Serve as above.
