Pear, Leek, Potato and Basil Soup

List of Ingredients
- 4 pears, peeled, cored and cubed
- 2 lge potatoes, peeled and cubed
- 1/4 cup fresh basil, finely chopped
- 2 leeks, green parts removed, cleaned very well and sliced
- salt and pepper to taste
- 4 cups chicken stock (vegetarians use water with white wine or veg stock)
Instructions
- Place pears, leeks, potatoes and basil in a large saucepan. Cover with stock and season well.
- Bring to the boil and simmer 30 minutes. Allow to cool, then puree.
- Push mixture through a sieve. Gently heat through and served top with a sprinkle of fresh basil.
Final Comments
-they suggested serving with some bacon chips in it (I disagree)
-for a creamier soup add 300ml milk before serving and heat through
