Pumpkin Soup

List of Ingredients
- 3 white onions, chopped
- 3 1/2 cups chicken stock
- 1.5kg peeled, seeded, cubed pumpkin
- pinch nutmeg (optional)
- 1 1/2-2 cups milk
- chopped parsley
Instructions
- Place onion, stock and pumpkin in a large saucepan.
- Bring to the boil, cover and simmer until tender (about 15 minutes). Cool for about 10 minutes.
- Puree in a blender or food processor until smooth.
- Return to saucepan, add nutmeg and milk. Reheat gently and adjust consistency with extra milk if necessary.
- Serve sprinkled with parsley.
Final Comments
Sometimes I saute the onion and pumpkin first but this recipe is lower in fat.
