Pumpkin and Bacon Soup

List of Ingredients
- 20g butter
- 500g butternut pumpkin peeled and chopped
- 1 cup milk
- 4 rashers chopped bacon
- 250g Edam or Cheddar cheese grated
- 1 chopped onion
- 2 cups water
Instructions
- Melt butter in saucepan. Saute bacon, onion and pumpkin for about 5 min.
- Add water and simmer covered for 15 minutes or until soft. Puree or mash.
- Add milk and half the cheese. Reheat without boiling. When serving, sprinkle with remaining cheese.
