Quick Mushroom Soup

- 50g butter
- 6 green shallots, sliced
- 2 tbs plain flour
- 1/4 cup marinated, roasted capsicums drained and roughly chopped
- 1/4 cup basil leaves, shredded
- 2 tbs cream or milk
- 1 l (4 cups) veg stock
- ground black pepper to taste
- 500g mushrooms, sliced
Instructions
- Melt butter in large saucepan over medium-high heat. add green shallots and cook 2-3 mins or until soft.
- Stir in capsicum and flour. Cook, stirring occaisionally for 3 minutes.
- Add stock and bring to boil, stirring constantly. Add mushrooms, reduce heat to medium low. Simmer uncovered stirring occaisionally for 10 minutes.
- Remove from heat. Blend or process to required consistency. Return to saucepan.
- Stir in cream and basil. Cook over low heat for 2-3 minutes or until just heated. Season with pepper. Serve immediately.
