    Quick Mushroom Soup

    List of Ingredients


    • 50g butter
    • 6 green shallots, sliced
    • 2 tbs plain flour
    • 1/4 cup marinated, roasted capsicums drained and roughly chopped
    • 1/4 cup basil leaves, shredded
    • 2 tbs cream or milk
    • 1 l (4 cups) veg stock
    • ground black pepper to taste
    • 500g mushrooms, sliced


    Instructions


    1. Melt butter in large saucepan over medium-high heat. add green shallots and cook 2-3 mins or until soft.
    2. Stir in capsicum and flour. Cook, stirring occaisionally for 3 minutes.
    3. Add stock and bring to boil, stirring constantly. Add mushrooms, reduce heat to medium low. Simmer uncovered stirring occaisionally for 10 minutes.
    4. Remove from heat. Blend or process to required consistency. Return to saucepan.
    5. Stir in cream and basil. Cook over low heat for 2-3 minutes or until just heated. Season with pepper. Serve immediately.
