Tropical Coconut Pumpkin Bisque

List of Ingredients
- 1 tbs oil or butter
- 500ml water
- salt and pepper
- 2 cloves garlic
- 1 lge, finely chopped onion
- 1 green chilli deseeded and finely chopped
- 1 tbs fresh ginger, finely chopped
- 750g pumpkin, deseeded and peeled
- fresh corainder or mint for garnish
- 1 1/2 cup coconut cream
Instructions
- Dice and peel the pumpkin. Warm butter in a large, heavy pot.
- Cook onions, chillis,green ginger and garlic gently until onion is translucent. Add diced pumpkin and water.
- Simmer about 1/2 hour until pumpkin very tender. Puree in a blender/food processor.
- Return to pot and reheat. Season and add coconut cream.
- Serve hot or chilled with fresh coriander or mint leaves.
