    List of Ingredients


    • 500g pork stirfry strips
    • 75g toasted cashews
    • 1 onion, diced
    • 10 snowpeas, halved
    • 2 tbs peanut oil
    • 2 cloves garlic, crushed
    • 1/2 each red, green and yellow capsicum (diced)
    • 1/2 cup (125 ml) chicken stock- salt reduced preferably
    • 2 tbs fish sauce
    • 2 tbs oyster sauce
    • 1/2 tsp brown sugar
    • 2 tsp cornflour


    Instructions


    1. Mix fish sauce, oyster sauce, sugar, cornflour and chicken stock together.
    2. Dry fry cashews (stirring) until golden and set aside. Stirfry garlic and onion until fragrant.
    3. Stirfry pork in 1-2 batches until just cooked. Allow pan to reheat between batches. Remove.
    4. Add a little more oil. Stirfry capsicum and snowpeas until bright. Return pork and stir to combine. Make a well in the centre and add sauce.
    5. Cook until sauce simmers and mix it in. Serve


    Final Comments


    I would want more veg- more snowpeas, mushroom, brussels sprout, beansprout, broccoli, bok choy...I would just want more veg. This could be good as one of several dishes though if others are vegetarian
