Cashew Pork Stir-fry

List of Ingredients
- 500g pork stirfry strips
- 75g toasted cashews
- 1 onion, diced
- 10 snowpeas, halved
- 2 tbs peanut oil
- 2 cloves garlic, crushed
- 1/2 each red, green and yellow capsicum (diced)
- 1/2 cup (125 ml) chicken stock- salt reduced preferably
- 2 tbs fish sauce
- 2 tbs oyster sauce
- 1/2 tsp brown sugar
- 2 tsp cornflour
Instructions
- Mix fish sauce, oyster sauce, sugar, cornflour and chicken stock together.
- Dry fry cashews (stirring) until golden and set aside. Stirfry garlic and onion until fragrant.
- Stirfry pork in 1-2 batches until just cooked. Allow pan to reheat between batches. Remove.
- Add a little more oil. Stirfry capsicum and snowpeas until bright. Return pork and stir to combine. Make a well in the centre and add sauce.
- Cook until sauce simmers and mix it in. Serve
Final Comments
I would want more veg- more snowpeas, mushroom, brussels sprout, beansprout, broccoli, bok choy...I would just want more veg. This could be good as one of several dishes though if others are vegetarian
