Chicken with Ginger Plum sauce

List of Ingredients
- 460g skinless chicken breast
- 2 tbs cornflour
- 1 small cucumber, halved, seeded and sliced
- 2 cloves garlic, crushed
- 2 tsp grated fresh ginger
- 1 tbs soy sauce
- 425g can lychees, drained
- salt to taste
- 3 med onions, cut into eighths
- 2 stalks celery sliced diagonally
- 1/2 tsp Chinese five spice powder
- 850g can plums, drained and seeded
- 1 cup water
- 1 tbs oil (peanut or veg)
- 1 tbs sesame oil
Instructions
- Cut chicken into 2cm cubes. combine cornflour and five-spice powder in a bowl. Add chicken cubes and toss until well coated.
- Blend or food process plums and water on pulse for 10 seconds until smooth.
- Heat oil in wok, swirling gently to coat base and sided. Add chicken and stirfry on high 2 min until brown. Remove and drain on paper towels.
- Add sesame oil, onion and celery to pan, stirfry 2 minutes or until tender. Add cucumber, garlic and ginger and sirfry 1 minute.
- Return chicken to pan with plum puree, soy sauce and lychees. Stir gently until sauce has boiled and thickened. Season and serve immediately with steamed rice.
