    List of Ingredients


    • 460g skinless chicken breast
    • 2 tbs cornflour
    • 1 small cucumber, halved, seeded and sliced
    • 2 cloves garlic, crushed
    • 2 tsp grated fresh ginger
    • 1 tbs soy sauce
    • 425g can lychees, drained
    • salt to taste
    • 3 med onions, cut into eighths
    • 2 stalks celery sliced diagonally
    • 1/2 tsp Chinese five spice powder
    • 850g can plums, drained and seeded
    • 1 cup water
    • 1 tbs oil (peanut or veg)
    • 1 tbs sesame oil


    Instructions


    1. Cut chicken into 2cm cubes. combine cornflour and five-spice powder in a bowl. Add chicken cubes and toss until well coated.
    2. Blend or food process plums and water on pulse for 10 seconds until smooth.
    3. Heat oil in wok, swirling gently to coat base and sided. Add chicken and stirfry on high 2 min until brown. Remove and drain on paper towels.
    4. Add sesame oil, onion and celery to pan, stirfry 2 minutes or until tender. Add cucumber, garlic and ginger and sirfry 1 minute.
    5. Return chicken to pan with plum puree, soy sauce and lychees. Stir gently until sauce has boiled and thickened. Season and serve immediately with steamed rice.
