Chinese Chicken and Mushrooms

List of Ingredients
- 2 tbs oil
- 4 chicken breasts (half breasts)
- 125g green capsicum
- 1 onion, roughly chopped
- 250g swiss brown mushrooms
- 1 1/2 tbs soy sauce
- 1 clove galric, crushed
- 125g snow peas, halved
- 1 tbs cornflour
Instructions
- Slice mushrooms. Slice capsicum into long strips. Slice chicken into similar long strips.
- Heat oil in wok. Add onion, garlic and ginger and cook 1-2 minutes. Add chicken and cook 3-4 min until lightly cooked. (beware of raw chicken)
- Add mushrooms, capsicum and snowpeas and stirfry for a further 3-4 minutes until chicken thoroughly cooked and vegies and tender/crisp. Add soy sauce.
- Blend cornflour with 2 tbs water, add to wok and stir through until thickened. Serve stirfry with steamed rice.
