    List of Ingredients


    • 500-600g lean pork strips
    • 3 tbs peanut oil
    • 2 1/2 tbs grated ginger
    • 2-3 red chillies (seeded and finely chopped)
    • 1 1/2 tbs lemon grass, finely chopped
    • 1 tbs grated lime rind
    • 8 spring onions, sliced
    • 1 1/2 tbs salt reduced soy sauce
    • 1/3 cup chicken stock
    • 3 tbs lime juice
    • 2 tbs hoisin sauce
    • 1 clove garlic, crushed
    • 200g sliced baby beans


    Instructions


    1. Heat 1 tbs oil in hot wok. Add half the pork, quickly toss to brown and seal meat (1-2 mins)
    2. Remove to side dish, repeat with 1 tbs oil and remaining pork. Remove.
    3. Heat remaining oil, reduce heat, add spring onions, ginger, garlic, chillis and lemon grass. Stirfry 1 minute.
    4. Add rind, juice, hoisin sauce, soy sauce, stock and beans. Cook 1-2 minutes.
    5. Return pork to wok, stir to combine. Serve with boiled noodles (or perhaps rice)


    Final Comments


    If you like to have lots of vegies (I do) add carrots, Asian greens, cauliflower or whatever you like or serve with wilted greens in oyster sauce on the side.
