    Braised Potatoes and Green Beans

    serves 4-6 (makes good leftovers too)


    List of Ingredients


    • 1/4 cup extra virgin olive oil
    • 10 medium red potatoes (about 900g)
    • 275g green beans (Italian broad beans or sometimes I just use broad beans)
    • 1 lge red onion, thinly sliced
    • 1 garlic, minced
    • 1 tbs chopped parsley..I usually add way more
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • 1 1/2 cups (or more) veg or chicken stock


    Instructions


    1. Peel (optional if washed) and slice potatoes. Cut beans into 1 inch lengths. In a heavy bottomed skillet, heat oil over medium heat.
    2. Add potatoes. Cook, turning occaisionally until lightly browned (about 8 mins)
    3. Add beans, onion and garlic. Cook, stirring often for about 5 minutes until onion softens. Stir in half the parsley, salt and pepper.
    4. Pour in enough broth (or white wine) to just barely cover the veg.
    5. Cover tightly and reduce heat to medium low. Cook 30-40 minutes until liquid is almost completely absorbed.
    6. Sprinkle with remaining parsley and serve immediately (perhaps with a green salad dressed with lemon)
