Braised Potatoes and Green Beans

serves 4-6 (makes good leftovers too)
List of Ingredients
- 1/4 cup extra virgin olive oil
- 10 medium red potatoes (about 900g)
- 275g green beans (Italian broad beans or sometimes I just use broad beans)
- 1 lge red onion, thinly sliced
- 1 garlic, minced
- 1 tbs chopped parsley..I usually add way more
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups (or more) veg or chicken stock
Instructions
- Peel (optional if washed) and slice potatoes. Cut beans into 1 inch lengths. In a heavy bottomed skillet, heat oil over medium heat.
- Add potatoes. Cook, turning occaisionally until lightly browned (about 8 mins)
- Add beans, onion and garlic. Cook, stirring often for about 5 minutes until onion softens. Stir in half the parsley, salt and pepper.
- Pour in enough broth (or white wine) to just barely cover the veg.
- Cover tightly and reduce heat to medium low. Cook 30-40 minutes until liquid is almost completely absorbed.
- Sprinkle with remaining parsley and serve immediately (perhaps with a green salad dressed with lemon)
