Spring Greens with Tomato and Lemon

This recipe can be served as a side dish, or added to cooked hot pasta (or cold pasta for a salad) as a complete vegetarian meal.
preparation 5 min, cooking 5 min, easy enough even for beginners
List of Ingredients
- 500g frozen spring green vegetables (broccoli, green beans, peas and sugar snap peas or a similar mix)
- 6-8 cherry tomatoes halved
- 1 tsp grated lemon rind
- 1 tbs lemon juice
- 1/4 cup fresh basil leaves
- 50g feta cheese crumbled (can use reduced fat if u like)
Instructions
- Cook vegies according to packet directions (if you like use fresh veg instead and cook in boiling salted water a few minutes). Drain and return to saucepan
- Add tomatoes, lemon rind and juice and basil, tossing well.
- serve sprinkeld with the feta cheese.
