Thai Style Mushroom Noodles

Recipe Introduction
Serves 4, leftovers reheatable or just make less for 1-2
List of Ingredients
- 500g hokkien noodles
- 400g cup mushrooms (or any mushrooms), thickly sliced
- 1/2 cup coconut milk
- 1 tbs peanut oil (or any cooking oil)
- 2 garlic cloves crushed or chopped
- 2 tbs red curry paste
- 1 onion, cut into thin wedges
- 1 bunch gai lum or bok choy or choi sum or even baby spinach (washed well, leaves seperated and chopped)
Instructions
- Cover noodles with boiling water for 1-2 minutes. Drain and seperate.
- Heat wok on high. Add oil. When hot add onion and garlic for 1 minute.
- Add stems of gai lum and stirfry for 1 minute until brightly coloured. Add curry paste and stir for 30 seconds.
- Add mushrooms, coconut milk, noodles and leaves. Stirfry for 2 minutes or until the leaves are wilted and everything is heated.
- Serve immediately.
