    Thai Style Mushroom Noodles

    Serves 4, leftovers reheatable or just make less for 1-2


    List of Ingredients


    • 500g hokkien noodles
    • 400g cup mushrooms (or any mushrooms), thickly sliced
    • 1/2 cup coconut milk
    • 1 tbs peanut oil (or any cooking oil)
    • 2 garlic cloves crushed or chopped
    • 2 tbs red curry paste
    • 1 onion, cut into thin wedges
    • 1 bunch gai lum or bok choy or choi sum or even baby spinach (washed well, leaves seperated and chopped)


    Instructions


    1. Cover noodles with boiling water for 1-2 minutes. Drain and seperate.
    2. Heat wok on high. Add oil. When hot add onion and garlic for 1 minute.
    3. Add stems of gai lum and stirfry for 1 minute until brightly coloured. Add curry paste and stir for 30 seconds.
    4. Add mushrooms, coconut milk, noodles and leaves. Stirfry for 2 minutes or until the leaves are wilted and everything is heated.
    5. Serve immediately.
