Avocado And Mushroom Fettucine

Recipe Introduction

one of those filling dishes that makes vegetarian accessible for anyone (except mushroom haters)
List of Ingredients
- 1 large or 2 small avocadoes, sliced
- juice of 1 lemon
- 250g fettucine
- 1 tbs pesto
- 1 onion, sliced
- 4 garlic cloves, sliced
- 200g mushrooms, sliced
- 2 tsp salt reduced soy sauce
- pepper
- 1 tbs olive oil
- whole or shredded basil leaves and lemon wedges to garnish
Instructions
- Place avocadoes on plate and drizzle with lemon juice.
- Bring large pan of water to the boil, then cook the fettucine.
- Meanwhile, heat oil and stir-fry onion for 1 min over medium-high heat. Add mushrooms and garlic and continue cooking, stirring, for 2 minutes.
- Reduce heat to medium and place a lid on the pan. Cook for 5 minutes, stirring once or twice.
- Remove from heat and stir in the soy sauce and pepper.
- Toss freshly cooked pasta with pesto, mushroom mixture and avocado slices.
- Serve immediately with basil and lemon wedges
