Recipe Introduction
Many people like baked beans made with bacon so that the fat flavours the beans. I don't like bacon, so i prefer this vegetarian version. They can be frozen.
Despite the recipe I like to add salt to mine.
List of Ingredients
- 350g haricot beans (dried)
- 1 lge onion, chopped
- 1 tbs oil
- 1 tsp dry mustard
- 2 tsp molasses
- 150ml tomato juice
- 2 tbs tomato puree
- 2 tsp brown sugar
- 275ml unsalted stock
Instructions
- Soak, drain, rinse the beans. Cook in fresh water until they are almost tender. Drain them again (bean cooking water can be used as a stock base in another recipe).
- Preheat oven to 125C. Heat oil in flameproof casserole and saute onion for 5 min. Add other ingredients and bring to boil.
- Cover and cook in oven about 4 hours stirring occaisionally.
- Serve with hunks of hot wholemeal bread or garlic bread and/or with poached eggs.
Final Comments
warm and cheap filler for winter.
