Fried Rice With Egg and Vegetables

serves 4
List of Ingredients
- 1 cup green peas
- 1/2 cup shredded cabbage
- 1 garlic clove, minced
- 3 dessert spoons soy sauce
- 2 free range eggs, beaten
- 1/2 red capsicum, sliced
- 2 tbs olive oil
- 10 sprigs fresh coriander
- 1 dessert spoon sweet chilli sauce
- 1/2 cup beansprouts
- 1/2 cup broccoli, finely chopped
- 4 shallots, chopped
- 1/4 cup shopped basil leaves (or torn)
- 4 cups cold cooked rice
- 1 stick celery, chopped
Instructions
- Lightly steam peas, then capsicum, broccoli and cabbage for NO MORE THAN 5 minutes. (what makes this recipe so yummy is the vegies are not overcooked)
- Heat oil. Saute shallots.Add garlic, coriander, basil and sauces and saute 3 minutes.
- Add precooked rice and beaten eggs and stir in.
- still stirring constantly; add bean sprouts and celery until warmed through.
- Serve with fresh salad.
