Macaroni Cheese with Vegetables

if you don't like some of the veg, leave them out. Use whatever veg you like instead. This recipe comes out bland so my six-year-old will eat it, but it can be flavoured up by adding stock powder, mustard or curry powder to the sauce or by using a more flavoursome cheese.
List of Ingredients
- 250g macaroni
- 1 carrot, sliced
- 1/2 cup broccoli (cut into small pieces)
- 3/4 cup cauliflower (cut into small pieces)
- small handful baby spinach (or big spinach finely chopped)
- 1/2 zucchini, sliced
- 1 cup mozzarella cheese
- 1 egg
- 1 tbs butter
- 1 tbs flour
- 1/2 cup breadcrumbs
- 1-2 cups milk (sorry I did not measure)
- salt, pepper, nutmeg (and dried or fresh herbs if you like)
Instructions
- Bring salted water to the boil. Add macaroni and carrots and cook about 5 minutes or until macaroni just tender.
- Combine cauliflower, spinach, broccoli and zucchini in an oven proof dish and toss through drained pasta and carrot.
- Beat egg with 1/2 cup cheese and mix these through pasta mixture.
- Knead butter and flour into a roux (ie knead them together) and place in heated saucepan. Add milk gradually, stirring.
- Season this white sauce as you like and allow to thicken (keep stirring)
- Pour over pasta and veg. Sprinkle breadcrumbs on top and the rest of the cheese on top of that.
- Bake in a preheated 180C oven about 30 minutes until done. If you dont want the cheese to brown too quickly use a lid or foil for the first 20 minutes.
