List of Ingredients
- 500g packet frozen vegetarian tortellini (or fresh)
- 250g button mushrooms, sliced
- 1/4 cup skim milk powder
- 25g butter
- 1 tbs flour
- 4 spring onions, chopped
- 1 1/2 cups high calcium milk
- 1/2 cup grated parmesan cheese
Instructions
- Cook tortellini in large saucepan of boiling water until cooked.
- Melt butter in saucepan and saute spring onions and mushrooms for 5 minutes
- Sprinkle over flour and cook, stirring for 2 minutes.
- Combine remaining ingredients together and add to pan. Bring to the boil stirring until thickened.
- Drain tortellini and serve immediately with sauce. Garnish with extra grated cheese and thinly sliced spring onions.
Final Comments
You can vary the herbs, add any veg you like with white sauce or add lemon zest. You could serve with a green salad or steamed vegetables to boost your vitamin intake.
