    serves 8 (as part of a meal or 2 if this is the meal)


    List of Ingredients


    • 2 medium pears, grated (skin on)
    • 1 medium zucchini, grated
    • 2 eggs, beaten
    • 1/3 cup polenta
    • salt and pepper
    • 1/2 ts dried mixed herbs
    • 2 tbs parmesan cheese
    • 1 clove garlic, crushed


    Instructions


    1. Combine pears and zucchini in a colander. Sprinkle with salt and stand 20 minutes to drain.
    2. Squeeze off excess moisture. Add remaining ingredients and mix well.
    3. Spoon onto oiled heavy based pan (or bbq). Cook until golden brown both sides.
    4. Serve with salad. If you cant get polenta use plain flour. Make up a burger wuth this and salad, non-vegetarian friends might want to add meat to the "burger" as well.
