    Potato and Asparagus Casserole

    If you wanted to you could use broccoli, corn or mushrooms instead of asparagus, but I like it as is. Serves 4 as a main or side


    List of Ingredients


    • 500g potatoes (desiree) diced
    • 3 spring onions, chopped
    • 6 asparagus spears, sliced
    • 125g grated cheese
    • 150ml cream
    • 1 egg
    • 1 tbs curry paste
    • freshly ground black pepper


    Instructions


    1. Place potatoes in a casserole dish and microwave on high for approx 10 minutes.
    2. Combine cream, curry paste, egg and pepper in a bowl and mix well.
    3. Sprinkle spring onions, asparagus and cheese onto the potatoes.
    4. Pour over the cream mixture and microwave 6-8 minutes until nice and hot.
