Potato and Asparagus Casserole

Recipe Introduction
If you wanted to you could use broccoli, corn or mushrooms instead of asparagus, but I like it as is. Serves 4 as a main or side
List of Ingredients
- 500g potatoes (desiree) diced
- 3 spring onions, chopped
- 6 asparagus spears, sliced
- 125g grated cheese
- 150ml cream
- 1 egg
- 1 tbs curry paste
- freshly ground black pepper
Instructions
- Place potatoes in a casserole dish and microwave on high for approx 10 minutes.
- Combine cream, curry paste, egg and pepper in a bowl and mix well.
- Sprinkle spring onions, asparagus and cheese onto the potatoes.
- Pour over the cream mixture and microwave 6-8 minutes until nice and hot.
