Thai Noodle Stirfry

serves 4-6. vary the veg if you like but this recipe is pretty balanced.
List of Ingredients
- 600g hokkien noodles
- 1 yellow capsicum, sliced
- 2 tsp oil
- 1 red capsicum, sliced
- 1 clove garlic, crushed (can use from jar or chopped)
- 2 tsp soy sauce
- 2 tbs sweet chilli sauce
- 400g baby bok choy
Instructions
- Place noodles in a large bowl and cover with boiling water. Seperate with a fork and drain.
- Heat oil in a wok. Saute capsicum and garlic until soft. Stir through noodles and sauces. Simmer until heated through.
- Add bok choy and stirfry until it wilts.
