    List of Ingredients


    • 1 1/2 cups wholemeal self-raising flour (or use plain with 1/2 tsp baking soda + 1/2 tsp baking powder)
    • 1/2 tsp mixed spice
    • 1/2 tsp cinnamon (YUM)
    • 1 cup chopped cooked apple
    • 1 cup sultanas/raisins (leave out if cooking for fussies)
    • 2 tbs almond oil
    • 2 egg whites
    • 1 tbs honey (or concentrated apple juice)
    • 1/2 cup unsweetened soy milk


    Instructions


    1. Preheat oven to 180C. Sift flour and spices. Add sultanas. Beat egg-whites.
    2. Add oil, honey, apple and milk to egg whites. Blend thoroughly. Add to dry ingredients.
    3. Stir until mixed. Spoon into lightly greased muffin tins. Bake 17 minutes until cooked.
