    These are really good ...but are very filling !!! hubby is stuffed with 3

    List of Ingredients




    Crepes yields 16 crepes
    ~~~~~~~
    1 c. flour 2 eggs
    1 1/2tbs.sugar 1 1/2 c. milk
    1 tsp .salt
    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
    1 lbs mushrooms 16 slices of black forest ham
    2 c tomatoe sauce
    2 c. grated cheddar cheese
    2 c. white sauce { 1 c.sour cream ,4tbs flour salt& pepper
    to taste

    combine flour,sugar& salt mix well , beat eggs until light & fluffy add milk,slowly add dry ingred. to egg mixture. let stand 30 minutes. Heat cast iron frying pan ,with a few drops of oil{pan is ready when a drop of water dances}pour a small amount of batter into pan, tip pan so batter gets evenly distributed around bottom of pan (you want them to be paper thin!)cook over medium heat flip when bottom is a nice golden brown * grease pan for each crepe

    Preheat oven 350F
    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Filling

    wash, chop and fry mushrooms in a blob of butter cook until tender and most of the juice is evaporated, sprinkle with flour, salt and pepper add sour cream stir well until mixture thickens. (this is the white sauce)Cover each crepe with a slice of ham ,spread mushroom mixture on each,roll up .place in greased shallow baking dish opening down cover with tomatoe sauce , sprinkle on the cheese bake for 35 min or until cheese is melted n' bubbly
