    Tasty, fluffy, hearty flap jacks.


    List of Ingredients


    • 1 Cup Sifted Flour
    • 1/2 tsp salt
    • 2 Tbsp Sugar
    • 2 tsp baking powder
    • 1 egg, lightly beaten
    • 3/4 Cup milk
    • 2 Tbsp cooking oil, melted butter or margine


    Instructions


    1. Preheat your griddle, cast iron fry pan while you mix the batter to a moderate heat.
    2. Sift flour, salt, sugar and baking powder into a bowl.
    3. Combine egg, milk and oil and slowly stir into dry ingredients and mix until dampened. Mixture should be lumpy.
    4. When a drop of cold water dances across your cooking sruface, place about 3 Tbsp to 1/4 cup of batter onto surface and spread until they are about 4" across.
    5. Cook until bubbles pop through the surface, turn gently and brown other side.
    6. Serve warm with your desired toppings.
    7. For thinner pancakes: add 2-3 Tbsp more milk.
    8. If your batter has been standing a long time, mix in an additional 1/4 tsp of baking powder before cooking.
    9. Nut Pancakes: Toss in aobut 1/2 cup of chopped nuts of your choice before cooking.
    10. Berry Pancakes: Fold in aobut 1/2 cup of fresh, slightly thawed frozen berries or drained canned berries.
    11. Apple Pancakes: Sift 1/4 tsp of cinnamon, 1/4 tsp of nutmeg along with the dry ingredients. Just before cooking fold in 1/2-3/4 cup minced tart apple.
    12. Rice Pancakes: INcrease eggs to 2, milk to 1 Cup and just before cooking fold in 1/2 cup cooked rice or wold rice.
    13. Buttermilk Pancakes: Reduce baking powder to 1 tsp. add 3/4 tsp baking soda, and use 1 Cup buttermilk or 1 cup sour milk instead of sweet milk.
    14. Whole Wheat Pancakes: Use 1/2 cup each whole wheat and white flour. Increase milk to one cup.
    15. Buckwheat Pancakes: Use 1/2 cup buckwheat and 1/2 cup white flour. Increase milk to 1 Cup.
    16. Sausage Pancakes: Reduce sugar to 1 tsp. Cook pancakes until bubbles appear, dot with sausage bits. Turn and brown. Serve all day!
    17. Cheese Pancakes: reduce sugar to one tsp. Mix in 1/2 cup Cheddar or your favorite cheese. Cook as directed and serve with creamed meat or vegetable.
    18. Onion Pancakes: Reduce sugar to 1 tsp. Mix in 1/2 cup satued onions and a pinch of sage and thyme. Cook as directed and serve with creamed or curried meat.
    19. Corn and Pepper Pancakes: Preapre as directed but reduce sugar to 1 tsp. Before cooking mix in 1/2 cup kernel corn and 1/4 cup diced sweet peppers. Cook as directed and top with Chili.
