    Scones - a good base to start with

    Recipe Introduction


    If you're going to be serving tea, you need scones. At least if it's english tea. Its just one of those things. This is a good basic scone recipe that can have all sorts of things added.


    List of Ingredients


    • 2 c. flour
    • 1/3 c sugar
    • 2 tbsp baking powder
    • 1/8 tsp salt
    • 1/3 cup butter
    • 1 egg
    • 1 tsp vanila
    • 1/2 c milk
    • 1 egg
    • 1 tbsp milk


    Instructions


    1. Mix the dry ingredients well in a large mixing bowl. Cut in butter until the entire mixture is crumbly.
    2. In another bowl mix the wet ingredients (save for the last egg and tbsp of milk). Beat together.
    3. Combine with dry mixture until mixed well, but not over mixed.
    4. Knead together for a wee bit. Make into 7" circle about one inch thick. Cut into 8 pieces (though I sometimes only score).
    5. Make the egg mixture by combing the last egg with milk.
    6. Place scones on parchment paper and brush with egg mixture. Bake for about 15 minutes at 375 or until browned nicely.


    Final Comments


    Try adding lemon zest and poppy seeds. Or poppy seeds and almond extract, with some almonds on top. Or some raisins. OR some chocolate chips. You get the idea.
