Baked Coconut Rice Desert

A wonderful baked rice desert with flavorsome coconut milk and a touch of lime.
List of Ingredients
- scant 1/2 cup short or round grain dessert rice
- 2 1/2 cup coconut milk
- 1 1/4 cup milk
- 1 large strip of lime rind
- 1/4 cup super fine sugar
- knob (about 1 Tbsp) butter
- pinch ground star anise
- fresh or stewed fruit to serve with
Instructions
- Mix the rice with the coconut milk, milk, lime rind and sugar.
- Pour the rice mixture into a lightly greased 6 1/4 cup shallow overproof dish and dot the surface with a little butter. Bake in the oven for 30 minutes at 325 F.
- Remove and discard the strip of lime. Stir the dessert well. add the ground anise if using. Return to the oven and cook for a further 1-2 hours, or until almost all the milk has been absorbed and a golden brown skin has baked on top of the dessert. Cover the top with foil if it starts to brown too much towards the end of the cooking.
- Serve the desert warm or chilled with fresh or stewed fruit.
Final Comments
The mixture will thicken as it cools so if you plan to serve it chilled, fold in about 3 tablespoons of coconut milk before serving to give it a thinner consistency.
