    Celery and Green Bell Pepper Salad with

    An elegant and light salad that will compliment rice and noodle dishes nicely.


    List of Ingredients


    • 2 cups been sprouts
    • 1 1.2 tbsp chopped cilantro
    • 3 tbsp fresh lime juice
    • 1/2 tsp mild chili powder
    • 1 tsp sugar
    • 1/2 tsp salt
    • 3 celery sticks cut into 1 inch pieces
    • 1 large bell pepper, deseeded, cored, chopped
    • 1 large tart dessert apple, diced
    • 2 tbsp sesame seeds, to garnish


    Instructions


    1. Rinse and drain the been sprouts. Pick them over and and remove any that seem a little brown or limp. Fresh and crunchy are the key here.
    2. To make the dressing, combine the cilantro, lime juice, chili powder, sugar and salt in a small bowl and mix thoroughly.
    3. In a large bowl, combine the celery, bell pepper, bean sprouts and apple.
    4. To prepare garnish, toast the sesame seeds in a dry skillet until they just start to color.
    5. Stir the dressing into the mixed vegetbales just before serving. Garnish with the sesame seeds.


    Final Comments


    To prevent the apples from browning, place them in a little lemon juice and water as soon as you have cut them. Turn them in the juice to ensure they are coated well.
