An elegant and light salad that will compliment rice and noodle dishes nicely.
List of Ingredients
- 2 cups been sprouts
- 1 1.2 tbsp chopped cilantro
- 3 tbsp fresh lime juice
- 1/2 tsp mild chili powder
- 1 tsp sugar
- 1/2 tsp salt
- 3 celery sticks cut into 1 inch pieces
- 1 large bell pepper, deseeded, cored, chopped
- 1 large tart dessert apple, diced
- 2 tbsp sesame seeds, to garnish
Instructions
- Rinse and drain the been sprouts. Pick them over and and remove any that seem a little brown or limp. Fresh and crunchy are the key here.
- To make the dressing, combine the cilantro, lime juice, chili powder, sugar and salt in a small bowl and mix thoroughly.
- In a large bowl, combine the celery, bell pepper, bean sprouts and apple.
- To prepare garnish, toast the sesame seeds in a dry skillet until they just start to color.
- Stir the dressing into the mixed vegetbales just before serving. Garnish with the sesame seeds.
Final Comments
To prevent the apples from browning, place them in a little lemon juice and water as soon as you have cut them. Turn them in the juice to ensure they are coated well.
