Recipe Introduction
A quickly prepared dish of sitr fried chicken and vegetables. Sesame and peanuts add a lovely crunch which is complimented by a fruit glaze sauce.
List of Ingredients
- 2 Tbsp vegetable oil
- 2 Tbsp sesame oil
- 1 lb boneless skinless chicken breasts, sliced into thin strips
- 8 oz brocoli, divided in small florets (wee little trees)
- 8 oz baby corn, halved if large
- 1 small red belle pepper, cored, deseeded and sliced
- 2 Tbsp soy sauce
- 1 Cup Orange Juice
- 2 tsp cornstarch
- 2 tbsp toasted sesame seeds
- 1/3 cup roasted unsalted peanuts
Instructions
- Heat the oils in a wok or large, heavy bottom skillet. Add the chicken strips and stir fry for 4-5 minutes until browned.
- Add the brocoli, corn, and red bell pepper and stir fry for a further 1-2 minutes.
- Meanwhile, mix the soy sauce with the cornstarch. Stir into the chicken and vegetable mixture, stiring constantly until the sauce has a slightly thickened and a glaze develops.
- Stir in the sesame seeds and peanuts, mixing well. Heat for a further 3-4 minutes, then serve at once with rice or noodles.
Final Comments
Make sure you use unsalted peanuts or the dish will be too salty! The soy sauce contains enough salt. Believe you me.
